Castella Creme Caramel


the ingredients :

  • 165g sugar.
  • 40 grams of water.
  • 5 eggs.
  • 160 grams mascarpone.
  • 265 grams of milk.
  • vanilla.
  • 45 grams flour.
  • 15 grams butter.
  • 4 glass molds.

Preparation :

-Boil 50 grams of sugar with 20 grams of water, when it turns brown, turn off the heat and add 20 grams of hot water to them.
-Pour a little into each mold.




-Mix 160 grams of mascarpone (must be at room temperature) with 70 grams of sugar with a spoon, after mixing add 250 grams of boiled milk, 3 eggs, and egg yolk, stir a little with the addition of a spoonful of vanilla.
-Put on a sieve bowl and pour the mixture.
-Put the mixture into the molds.




-Mix two egg whites with a mixer, adding 45 grams of sugar little by little, when finished, add one egg yolk and mix again.



-We add to them 45 grams of sifted flour in two parts (we pour the flour, mix and repeat the ball again).
-Mix 15 grams of warm milk with 15 grams of melted butter, mix them well with the mixture.
-Put the castella mixture on top of the molds.



-Pour boiling water into the oven tray, then put the molds.


-Bake in the oven at 170 ° C for 40 minutes.


-Take it out of the oven and when it cools down to room temperature put it in the fridge.
