the ingredients :

  • 75 grams dark chocolate.
  • 55gm unsalted butter.
  • 45 grams cocoa powder.
  • 22 grams flour.
  • 105 grams of sugar.
  • 90 grams egg white.
  • 60 grams egg yolk.
  • 75 grams of heavy cream.
  • Sugar powder.
  • Cake mold 15 cm.

Preparation :

-Cut 75 grams of chocolate into small pieces.

-Cut 55 grams of unsalted butter into squares and leave it at room temperature (to become soft).

-Mix 60 grams of egg yolk with 25 grams of sugar until slightly white.

-Beat 90 g of egg whites with 80 g of sugar (add sugar in three batches), until we have a meringue.

-Heat 75 grams of heavy cream until it boils.

-Add the hot cream to the chocolate (mix them together), when their temperature drops below 40 degrees, add the butter and stir until it melts.

-Sift the cocoa powder, add it to the mixture (mix well), then add the beaten egg yolks (mix them a little), add to them 22 grams of sifted flour, after adding the flour, mix well.

-Add the meringue to the mixture and stir together.

-Put the mixture in a cake mold.
-Bake first at 150 ° C for 30 minutes, then cover the cake with aluminum foil so that it does not burn, then bake at 130 ° C for 60 minutes.
-After baking, sprinkle powdered sugar over the cake.
