Ingredients :

  • 70 grams crushed biscuits.
  • 70 grams melted butter.
  • 7 grams gelatin sheets.
  • 200 gr cream cheese.
  • 50 grams of mascarpone cheese.
  • 110 grams of sugar.
  • 150ml heavy cream.
  • 55 ml lemon juice.

ingredients :

- Mix 70 grams of crushed biscuits with 20 grams of melted butter and, after mixing, put them in the mold.



-Put 5 grams of gelatin paper in ice water.
- We bring a glass bowl, put 200 grams of cream cheese and 50 grams of mascarpone cheese, stir them with a spoon, add 50 grams of sugar and stir again until the sugar mixes with the cheese.



- Take the gelatin out of the ice water and put it in 30 ml of hot water and stir until the gelatin dissolves in the water.
-Put the dissolved gelatin into the cheese mixture and stir together.


- Whisk 150 ml of heavy cream with 10 g of sugar, over ice water for 2 minutes, then pour them over the cheese mixture and add 5 ml of lemon juice, mix well, then pour the mixture into the mold, and roll the mold with it. Plastic wrap, and refrigerate for two hours.







-Put 2 grams of gelatin paper in ice water.
- Put an egg in a glass bowl, stir it a little, add 50 grams of sugar to it, stir again until the sugar dissolves in the eggs, bring to the heating bowl, and pour the mixture, 50 ml of lemon juice and 50 g of unsalted butter.




- Take the gelatin out of the ice water and put it in 10 ml of hot water and stir a little until the gelatin dissolves in the water.
- Turn the stove on low heat, put the heating pot on the stove, and stir the ingredients until the butter melts, and after the butter has melted, take the pot out of the heat, add the melted gelatin mixture, and stir the mixture to mix the gelatin.



- Take the mold out of the refrigerator, pour the mixture over the ingredients, re-wrap and return to the refrigerator for an hour.


-In a bowl, put 50g of mascarpone cheese, 50ml of heavy cream, and 9g of sugar, and whisk them over the ice water.
-Pour the mixture into a tube, and decorate the cake on top.
